Grilled Chicken Raspberry

• 6 chicken breast boneless, skinless
• 1 / 2 cup frozen raspberries, thawed
• 1 cup raspberry vinaigrette
• 1 / 4 cup raspberry vodka (optional)
• 1 / 4 cup mint leaves, finely chopped (optional)
• Fresh mint sprigs, for garnish (optional)
• Fresh raspberries for garnish (optional)

Rinse chicken and pat dry with paper towels. Place chicken in a large zip top bag. Add raspberries, vinaigrette, vodka (if desired) and chopped mint. Press the air and seal bag. Gently crush the raspberries pocket. Marinate in the refrigerator for 1 to 4 hours.

Preheat grill on medium heat. Place chicken on the grill and cook for 4 to 6 minutes per side. Remove from the grill and place on a serving plate. Garnish with fresh mint and branches of fresh raspberries, if desired.

Try this:
2 cups dry sherry
Vinegar 1 / 2 cup white wine
1 / 2 cup teriyaki sauce
5 garlic cloves, minced
1 medium onion, chopped
1 / 3 cup firmly packed brown sugar
3 (3) pound broiler-fryers
Wood chips, soaked
Combine dry sherry, vinegar, teriyaki sauce, garlic, onion and brown sugar in a large shallow dish. Prepare the wood and charcoal fire in smoker. Spray grill with oil. Cover with lid and cook for smoking 3 1 / 2 to 4 1 / 2 hours or until meat thermometer registers 185 degrees F °. Yield: 15 to 20 servings.
